I made this black bean salad for dinner tonight. It tastes amazing! I modified the original recipe to make it a little more calorie friendly. You need to make this immediately.
Black Bean Salad
2 15 oz cans black beans, rinsed and drained
1 cup frozen corn kernels, thawed
2 red bell peppers, diced
2 cloves garlic, minced
2 Tbsp shallots, minced
1/2 tsp salt
1 Tbsp sugar (optional)
1/4 tsp cayenne pepper
9 Tbsp extra virgin olive oil
6 Tbsp lime juice
1/2 cup cilantro, chopped
2 avocados, chopped
Combine all ingredients except for avocados in a large bowl and mix well. Cover and chill for a few hours or overnight. Right before serving, add avocados and mix gently.
Serves 6-8
