Asian Slaw

Salad:

1/2 Chinese cabbage, finely shredded

2 carrots, julienned

2 cups snow pea shoots, trimmed

1/2 cup peanuts, toasted and chopped

1 red bell pepper, julienned

5 scallions, thinly sliced

1/4 cup finely chopped fresh mint

1/4 cup fresh cilantro

Dressing:

3 tablespoons freshly squeezed lime juice

1 1/2 tablespoons Asian sesame oil

1 tablespoon soy sauce

1 clove garlic, minced

1 teaspoon finely grated ginger

1 teaspoon finely grated jaggery or brown sugar

Salt and black pepper

Salad: Combine the cabbage, carrots, snow pea shoots, peanuts, bell pepper, scallions, mint, and cilantro in a large bowl.

Dressing: Whisk the lime juice, sesame oil, soy sauce, garlic, ginger, and palm sugar in a small bowl. Pour over the salad and toss to combine. Season with salt and pepper and serve.
