Raw Energy Salad Salad:
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
2 tablespoons sesame seeds
2 teaspoons cumin seeds
1/4 red cabbage, finely shredded
1 large carrot, grated
1 cooked beet, grated
2 cups baby spinach, finely chopped
1 red onion, thinly sliced
1/4 cup dried currants
3 tablespoons finely chopped fresh mint
Dressing: Finely grated zest and juice of 1 orange
3 tablespoons pomegranate molasses
1 tablespoon extra virgin olive oil
Salt and pepper
Salad: toast the pumpkin, sunflower, sesame, and cumin seeds in a medium pan over medium heat until golden brown, 3-5 minutes. Combine the red cabbage, carrot, beet, spinach, onion, currants, mint, and toasted seeds in a large bowl.
Dressing: whisk the orange zest and juice, pomegranate molasses, and oil in a small bowl. Pour over salad and toss to combine. Season with salt and pepper to taste.
